The flavors and variety, from seafood and chicken to veggies and spices are a show stopper. We roamed into many different places to eat. Some were high end and others on the street were fabulous.
Chicken Skewers with peanut sauce became the highlight for me. I could not stop ordering them no matter what time of day or place. I know that are in many restaurants in North America. And yes they are good. But….the flavor here is a show stopper. I really wanted to get the recipe and Voila! I have the RECIPE! Here we go. Its easy peasy.
Chicken Skewers with Peanut Sauce
Ingredients
1 pound of boneless Chicken breast
2 cloves garlic minced
1 tin coconut milk
2 teaspoon minced ginger
1 tablespoon fish sauce
2 tablespoon brown sugar
1 tablespoon cilantro chopped
Peanut Dipping Sauce
1/2 cup peanut butter
1 ( or 2) cloves minced garlic
1 teaspoon minced ginger
2 tablespoons soy sauce
1 tablespoon brown sugar
Juice from one lime
1 tablespoon sesame oil
2 tablespoon water ( more or less depending on the thickness you prefer)
Directions
Chicken
Add all the chicken and ingredients in a plastic bag and marinate between one hour ( minimum or up to six hours.
Thread the chicken onto skewers and grill on medium heat for about 5 minutes per side.
Sauce
Add all the ingredients together and blend in a food processor.
That’s it ! Enjoy!
