Thai Food and Chicken Skewer Recipe

So much to see and do in Thailand….shopping , history , people and FOOD!

The flavors and variety, from seafood and chicken to veggies and spices are a show stopper. We roamed into many different places to eat. Some were high end and others on the street were fabulous.

I know that are in many restaurants in North America. And yes they are good. But….the flavor here is a show stopper. I really wanted to get the recipe and Voila! I have the RECIPE! Here we go. Its easy peasy.

Chicken Skewers with Peanut Sauce

Ingredients

1 pound of boneless Chicken breast

2 cloves garlic minced

1 tin coconut milk

2 teaspoon minced ginger

1 tablespoon fish sauce

2 tablespoon brown sugar

1 tablespoon cilantro chopped

Peanut Dipping Sauce

1/2 cup peanut butter

1 ( or 2)  cloves minced garlic

1 teaspoon minced ginger

2 tablespoons soy sauce

1 tablespoon brown sugar

Juice from one lime

1 tablespoon  sesame oil

2 tablespoon water ( more or less depending on the thickness you prefer)

Directions 

Chicken

Add all the chicken and ingredients in a plastic bag and marinate between one hour ( minimum or up to six hours.

Thread the chicken onto skewers and grill on medium heat for about 5 minutes per side.

Sauce

Add all the ingredients together and blend in a food processor.

That’s it ! Enjoy!
